Gluten-free, Dairy-free, No Added Sugar, Healthy and Nutty Banana Bread

• Preheat oven to 180 degrees Celsius. Lightly grease a sheet of Baking Parchment and place in a Banana Bread tin.

• In a large bowl mix 200g Organic Buckwheat Flour with a teaspoon of Cinnamon.

• Using a sharp food processor or NutriBullet, blend 150g Walnuts to a moist powder/flour consistency, then add to bowl.

• Take 4 very ripe (overripe is better!) Bananas and blend in NutriBullet/food processor with a dash of Almond Milk until it’s a creamy smooth consistency, then add to bowl and mix well.

• Finally, add one tablespoon of Coconut Oil and any extra Almond Milk to make a thick cake batter consistency.

• Pour into Banana Bread Tin, place in oven and put a sheet of Baking Parchment on top to prevent browning too quickly.

• Bake for around 1 hour and 10 minutes or less until the top is crisp and firm and a skewer comes out mostly clean ( a bit of batter on it is right).

• Leave to cool et Violà!
