Gooey Chocolate Fondant Cake

• Preheat the oven to 200 Celsius.

• In a large bowl, mix 200g buckwheat flour with 60g of raw cacao powder, 2-3 tablespoons of sugar, a tablespoon of melted coconut oil and vanilla extract.

• Mix in two beaten eggs and enough almond milk to make the consistency like thick pancake mix.

• Beat with electric whisk until it feels light and airy.

• Bake for around 7 mins or until the outside is cooked but the inside is still gooey (knife comes out slightly wet).

• For the icing simply melt your favourite chocolate in a bam Marie and spread on top! Yum!

Served with homemade sauce and organic ice cream!
