Vegan White Sauce Recipes

• Preheat the oven to 180 Celsius.

• Slice an aubergine into thick circles, place on tray and rub in avocado oil and oregano. Roast for about 15mins or until soft when sliced through.

• Chop a Romano pepper into quarters and on a separate tray, roast in oven for 5-6 mins until soft then set aside to cool.

• I used left-over pasta so I added boiling water to it to soften.

• In a large pan, fry garlic in avocado oil till cooked. Add a tin of chopped tomatoes, tomato passata, fresh sage, thyme and chives, as well as a very good sprinkle of dried mixed herbs, and Worcester sauce (or soy sauce). Simmer for 5 minutes, before chopping up pepper into chunks and adding to sauce.

• In a large pasta-bake dish, add cooked pasta, followed by half the sauce, then layer on aubergines before adding the rest of the tomato sauce.

• Cook for 10-15mins until bubbling and soft.

• For the white sauce, blend tofu, olive oil, apple cider vinegar , lemon juice, nutmeg and salt and pepper in a NutriBullet.

• Serve with white sauce et Voilà!

• Sourdough bread, poached egg, vegan hollandaise, garlic and plum tomatoes.
