Vegan Healthy Mac’n’Cheese

Yum!
Served with fresh chives!

• Boil gluten-free pasta until soft, drain, then leave to cool.

• Blend 1/2 pack of organic tofu, 2-3 tablespoons of olive oil, splash of apple cider vinegar, juice of 1 lemon, salt, pepper and nutmeg.

• Pour sauce over pasta, and sprinkle with fresh chives finely cut.

• Served here with spicy carrot mash and lime-marinated chicken. Recipes coming soon..
