Low-Sugar Blackcurrant Jam & Mousse

• Blend fruit of choice in a NutriBullet until it’s a thick, smooth sauce.

• Pour into a pan and cook on a medium heat.

• In a mug or jar, mix two tablespoons of arrowroot with cold water until combined and smooth.

• Pour arrowroot water into the fruit pan and heat until it’s bubbling.

• Add 1-2 tablespoons of sugar, as much or as little as you want!

• Cook and stir until the sauce has thickened as much as possible and then set to cool.

• Once cooled place in jars and store in the fridge. For a thick mousse leave at least 2 hours ideally overnight, or for a jam leave until cooled and it should be consistency to spread!
